Pretzel Dogs with Cheddar Beer Dipping Sauce

These awesome Super Bowl Snacks might breath some air into some of your deflated guests.  This recipe takes some time but feel free to prep the hotdogs with dough ahead of time.

For the pretzels:

1 package of dry yeast

1 ½ cups of warm water

2 tablespoons of light brown sugar

6 tablespoons of melted butter

2 ½ teaspoons of salt

4-5 cups of flour

¾ cup of baking soda

1 egg plus 1 tablespoon of water beaten

Coarse salt to top

Cocktail hotdogs (about 60)

 

Directions for making the best Super Bowl Snacks:

In a mixer combine the warm water, yeast, sugar and butter. Mix with the dough hook attachment until combined and then let stand for 5 minutes.

Add salt into the mixture.  On slow speed add in flour, ½ a cup at a time, until only one ½ cup is remaining. Increase speed to medium and allow dough to knead until fully combined, and it pulls away from the edges of the bowl. If the dough is too wet add the last ½ cup of flour one tablespoon at a time.

Remove the dough from the mixer and knead on a flat surface until it forms into a ball.

Grease a large bowl with oil and place dough into the bowl.  Oil the top of the dough as well. Place bowl in a warm place and allow to rise for 1 hour.

Peheat oven for 425 degrees

Cut the dough into 4 equal pieces. On a floured surface, roll the fourths into ropes that are about ½ inch thick.

Take a hotdog and roll the dough around the sausage and cut the dough where the ends meet. Pinch the seam of the dough. Repeat until all of the hotdogs have dough around them.

Bring about 3 quarts of water to a boil with the baking soda in a large pot.

Boil the hotdogs in batches of about 10 so that they are not crowded in the pot. Boil for about 30 seconds, remove with a slotted spoon and place onto a baking sheet lined with parchment, seam side down. If the seam of the dough has come apart pinch it back together. Make sure there is at least an inch between the hotdogs.

Brush the dough with the egg wash and sprinkle with salt.

Bake for about 15-17 minutes or until they are golden brown.

Let rest for 10 minutes before serving.

 

Super Bowl Snacks Cheddar Beer Dipping Sauce:

 

Ingredients:

1 Bottle of medium lager

1 ½ cups of sharp cheddar cheese

2 tablespoons of flour

Salt and pepper

1 chopped jalapeño (optional)

 

Directions for Super Bowl Snacks Dipping Sauce:

Combine flour and cheese.

Bring beer to a boil in a saucepan. Add cheese and reduce heat to medium/low and constantly stir until fully combined.

Add salt and pepper and jalapeño if desired.

Serve in a bowl with the pretzel dogs and try to grab one before your guests devour them all!
